These pans are great; there is never a chance of bread sticking/not releasing from the pan. The first such pan I found was "Kaiser" brand from Germany, but this one is just as good.

I have purchased a few of these pans for gifts. The are great for making ice cream cakes and quick breads

I bake a chocolate pecan pastry sheet streudel that is huge and I was always on the lookout to find a pan that could contain it when it cooked rather than sliding around a baking sheet. Well, this thing is great! It would be better if it was an inch or two longer, but still works for my needs. The top sits on the raised bed of the bottom tray and securely tightens. I still recommend placing the pan on a baking sheet as liquid can still drain a tiny bit from the bottom. I add pastry sheet braids and leaves to my streudel and this really helped to keep them from sliding.
