I had no interest in Bundt pans, but then I realized 3 advantages:(1) can REDUCE CALORIES -- no frosting or icing necessary. A Bundt cake looks pretty, and does not look bare if frosting is omitted. Yes, I realize that cake is not diet food, but if you are making a cake for some occasion, leaving off the frosting does cut down on the sugar.(2) save TIME because, again, the frosting can be omitted. You get a regal-looking cake that stands taller than a sheet cake, but does not require tricky stacking of layers.(3) the tube in the center provides air circulation, for more EVEN baking of cake center. This is especially important for those living at higher elevations.This is a high quality pan, heavyweight but not as heavy as cast iron. The size is practical. It can handle a large, old-fashioned recipe that produces 15 cups of batter. It can also handle medium size recipes, like 10 cups. The resulting cake will have the same diameter, whether you are using a 10 cup or 15 cup recipe. The difference will be in the height of the cake.Be sure to read the directions and tips enclosed with the pan. This pan, combined with recommended spraying with Bakers Secret, results in a cake that slides out easily; almost too easily. Warning: Be sure to have a plate underneath the pan when you tip it upside down; it slips out so rapidly, in the blink of an eye.After baking, be patient; allow it too cool for the recommended time period (10 minutes if I recall correctly), before flipping it upside down. Otherwise, a risk that the cake will break apart.On the other hand, you don't want to leave it sitting for hours until it is cold, because maybe the oil or shortening or whatever has a chance to set up, harden(Thanks to J. L. McClure for that suggestion!).If anyone is experiencing Bundt cakes that stick to the pan, I suggest looking at the great information that J. L. Mcclure posted Sept.2007, as a comment-response to the 1-star review written by "Mom of 4" on July 24, 2007.A note about high elevations, cakes tend to puff up a little higher at places not touching the sides or middle. I think it would be worse with cheaper, thinner pans. Fortunately, when flipped out onto the serving plate, that un-evenness is hidden, appearing as if it were part of the intended shape at the base of the cake. This is in contrast to regular layer-style cakes, which are more problematic.

The first time I baked in this pan was a lemon yogurt bundt cake. everybody thought that I had covered it with chocolate because it was brownish on the outside when all it was was the crisp outside layer of the cake. It was soo delicious. The cake is easily realeased from the pan. The definition of the cake is amazing. They pan never failed me and I am sure it won't fail you. Just remeber to spray the pan before pouring the batter in.

the nordic ware bundt pan is great to use for cakes. they always come out perfect.....would definitly recommend this cake pan.
