I've used this 4 times now for holiday baking and I love it! I brush on butter and use a fine strainer to dust it with flour in the sink. Dusting just the top of each with almond meal did not work well. The first time I used a pound cake mix. I over baked them, but they popped out perfectly anyway. Then I started using the Krusteaz gingerbread cake and cookie mix. Since these are cakelets, I used 1/4 cup less water than the cake recipe and added 2-3 Tbsp. of soft butter. I put 1 Tbsp. of batter in each acorn and baked them at 375 degrees for 22 minutes. Meanwhile I made a glaze of powdered sugar, heavy cream, milk, and the juice and zest of one lemon. I let them rest in the pan for 10-15 minutes, then dropped each in the glaze, rolled it over to coat it, and let it dry on a rack. They were so cute some guests thought they were just decoration. They loved the lemon in the glaze and are a good serving size, better than a cupcake. The glaze covering them seals in the moisture and they can sit out without hardening for days. I am now buying a second pan so I can bake a whole mix or recipe at once. Orange glaze? Pound cake with Bourbon glaze...

My Nordic Ware Acorn cakelet pan arrived this week. I took some time over the weekend to make banana bread cakes, and per the advice of other readers, I added just a little extra liquid to the mix. They were adorable, with one glitch that I'm surprised wasn't mentioned. Since the product information said they could be put together with icing (I used melted chocolate) it would have made sense for the acorns, with their jaunty little stems, to have half the stems pointing to the right, and half to the left so they would match when joined. Instead, the ratio is 11 to 7, leaving two slightly mutant acorns when put together. We remedied that by cutting off the stems and eating them. I know Nordic Ware won't be redesigning this product in the near future, at a cost of thousands in mill work. However, perhaps they'll think of that when making their next unique and special pan.Note: All right, I admit it. We bit off those four stems. Now I feel better.Nordic Ware Platinum Acorn Cakelet Pan

I have used this pan three times in the past two weeks. Unlike some other pans, the acorn shape comes out perfect each time. The non-stick really does work. And my kids love to eat pumpkin bread in this shape. We are a gluten free family. This seems to be the perfect size for baking portions with the rice flour, which is more dense. This size makes our bread light and fluffy!!! Yum.
