I'm sold on this Parrish's Magic line cake pan. Compared to a Wilton Performance pan this one is much heavier and has a sturdier lip. In fact, a 6 inch by 3 inch deep Parrish's Magic pan weighs about 3 ounces more than the larger 8 inch by 3 inch deep Wilton Performance pan! The Parrish's pans are less expensive than comparable Wilton brand pans and the Parrish's Magic pans are made in the USA. (Wilton Performance pans are made in China.)

I practice my cake making skills at home these days, and got sick and tired of my non-stick pans scratching, rusting, and just generally not doing a good job. As my cakes have become more grand these days, I needed some good rounds to do layer cakes. I got the 10", 8" and 6" x3" rounds of Parrish Magic Line on Amazon.When the arrived and I unwrapped them, I couldn't help but become giddy. Wow, oh wow.. these were some *solid* pans! Good and heavy, evenly weighted, all the things I would look for in a store, and have yet to find at any box store (let alone for Amazon's price!!!). Upon cleaning, I did come across the most annoying thing, however: the dreaded super glue sticker. Why are all these manufacturers putting ridiculously glued stickers to the bottom of everything?? So annoying :( Even after some serious washing, I had to stack the pans with papertowels in between, because the spots were *still* sticky! After first baking, that seemed to dissapate, though.I recently baked a mother's day hat cake using the 10 and the 6, and although I knew the quality of baking eveness would be better than my old thin cheapo nonstick pans, I was suprised at just how good they worked. Not only were they evenly baked all over, my cakes were level! I have *never* had that happen before. Usually, I get "dome" cakes that require cutting off ridiculous amounts to make level, so you can imagine how happy this made me :) The trimmings from these could fit in a spoon. Using some good shortening and flouring, the carrot cakes also came out with minimal coaxing, completely intact. Cleanup was super easy, and I hand washed these before the crumbs had time to go cold and harden overnight.(Btw, for those curious, I did not have to use one of those little rings for my 10" to come out right)So, in summary: I am a believer. Better quality pans make better quality cakes, and I am extremely happy with these pans. You certainly can't beat them for price, and they have left me some of the most evenly baked cakes I have *ever* made at home. Thankyou Parrish! I will never go back to cheap non-stick ever again.*Update: Nov 27, 2011* The pans are still going great.. have never had a sticking issue yet with any of my cakes! :) I still hand wash them, since it's just easier to do when they're still warm, and there's just shortening and occasional crumbs to clean out. I have also used the 8" to make homemade cinnamon rolls in, and they came out just as good as the ones I baked in glassware! No burned bottoms, evenly cooked, and still easy to clean. Truly awesome pans!
