Normally, I wouldn't have much to say about baking pans one way or another, unless to complain about one being flimsy or baking unevenly. As that's not the case with Fat Daddio's pans, I originally didn't intend to post a review.But last week, my roommate convinced me to make Igor bars for his birthday. Igor bars, if you're not familiar with them, are a layered dessert with chocolate chip cookie dough on the bottom, caramel, and rice krispie treats. They're gooey and sticky and after hours spent slaving in the kitchen, I about died when I realized that I'd forgotten to grease the pan into which I'd just finished layering my caramel-y, marshmallow-y creation. Time came to cut the thing and serve it, and I was sure we'd have a horrible mess on our hands.Not so. The Igor bars, caramel, marshmallow, stickiness and all came out without even leaving much residue behind.The next time I need to buy baking pans, I'll be coming back to this company.Holy crap. Just have to add to this review, because I made caramel corn in these pans, plus a third pan that I had sitting around in my kitchen. The caramel coating was made of sugar and corn syrup and was sticky as all get-out, and it was a PAIN to get out of the odd-duck pan, but when I poured the excess coating out of the Fat Daddio pans, it was like I was pouring out some kind of thick oil. It didn't stick to the pans at all. I'm pretty sure some laws of physics were being broken.

These pans are a very nice weight. The sides go straight up to form a nice edge. These will probably last me my lifetime.

These pans are easy to clean, heat evenly,and all my baked goods have come out perfectly. I think they are sized better than some I have purchased elsewhere. the 9X13 is truly 9X13.I purchased these for a small bakery I work in, and hope to get some for home soon.
